04 - Spread mixture evenly in a greased 8-inch (20 cm) baking dish and smooth the surface.
05 - Sprinkle remaining cheddar and mozzarella evenly over the top.
06 - Bake for 20 to 25 minutes until bubbling and cheese is melted with a light golden crust.
07 - Remove from oven; let rest 5 minutes, then garnish with chopped scallions or chives.
08 - Serve warm alongside crispy tortilla chips for dipping.
