01 - Preheat your oven to 325°F. Line a baking sheet with parchment paper, preparing it for the granola mixture.
02 - In a mixing bowl, combine the rolled oats, chopped nuts, shredded coconut (if using), honey, coconut oil or melted butter, vanilla extract, and a pinch of salt. Mix thoroughly to ensure all ingredients are well coated.
03 - Spread the granola mixture evenly across the prepared baking sheet. Bake for 12 to 15 minutes, stirring halfway through, until the granola is golden brown and crisp. Remove from oven and allow to cool completely on the baking sheet, as it will crisp up further.
04 - In a separate small bowl, whisk together the Greek yogurt, fresh lemon juice, lemon zest, and honey until the mixture is smooth and well combined.
05 - In another bowl, gently toss the fresh blueberries with 1 tablespoon of honey to lightly sweeten them.
06 - To assemble, spoon a layer of the lemon yogurt into the bottom of individual serving glasses or bowls. Follow with a layer of the honey-tossed blueberries, then a layer of the cooled honey granola. Repeat these layers as desired, finishing with a final sprinkle of granola on top.
07 - Serve the parfaits immediately for optimal texture, or refrigerate for up to 2 hours to enjoy them chilled. Prolonged refrigeration may soften the granola.
