# What You Need:

01 - 1.1 lbs boneless, skinless chicken breast, cut into thin strips

03 - 1 yellow bell pepper, sliced
04 - 1 medium zucchini, sliced into half-moons

06 - 1 cup cherry tomatoes, halved

# How-To Steps:

01 - Combine chicken strips with 1 tablespoon olive oil, lemon juice, oregano, cumin, paprika, salt, and black pepper in a bowl. Mix thoroughly and let marinate for 10 minutes while preparing vegetables.
02 - Heat the remaining 1 tablespoon olive oil in a large skillet or wok over medium-high heat.
03 - Add marinated chicken to the hot pan and cook for 4–5 minutes, stirring frequently, until cooked through and lightly browned. Remove chicken from the pan and set aside.
04 - Add onion and bell peppers to the same pan. Stir fry for 3 minutes until just tender.
05 - Add zucchini and garlic to the pan. Continue stir frying for another 2 minutes.
06 - Return the cooked chicken to the pan, add cherry tomatoes, and cook for 2 more minutes until tomatoes begin to soften.
07 - Add spinach and toss until wilted, about 1 minute. Remove from heat.
08 - Sprinkle with crumbled feta cheese and parsley. Serve immediately with lemon wedges on the side.
