06 - 1/4 cup extra-virgin olive oil
07 - 2 tbsp fresh lemon juice
08 - 1/4 cup grated Parmesan cheese

13 - Lemon zest, for sprinkling
14 - Freshly ground black pepper
15 - Extra Parmesan cheese

# How-To Steps:

01 - Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente according to package directions. Reserve 1/2 cup pasta water then drain.
02 - In a food processor or blender, combine avocados, spinach, garlic, olive oil, lemon juice, Parmesan, basil if using, salt, and pepper. Blend until smooth, scraping sides as needed.
03 - Add 2 to 4 tablespoons of reserved pasta water to the sauce and blend again until creamy and pourable.
04 - Return drained spaghetti to the warm pot. Pour avocado-spinach sauce over pasta and toss to coat evenly. Add more pasta water if necessary for a silky texture.
05 - Divide pasta among plates and sprinkle with lemon zest, extra Parmesan, and freshly ground black pepper.
06 - Serve immediately while warm.

# Helpful Tips:

01 -
  • It's ready faster than most takeout, perfect when you're hungry but still want something wholesome.
  • The avocado creates an impossibly silky sauce with zero cream—just pure, bright, green goodness.
  • It's flexible enough to throw in whatever vegetables you have on hand without disrupting the magic.
02 -
  • The avocado will start to brown within minutes of blending if you don't add lemon juice right away—it's chemistry, and the acid is your only real defense.
  • Pasta water is non-negotiable; regular water or cream won't give you that same silky, clingy texture that makes the sauce feel luxurious.
03 -
  • Reserve your pasta water before draining, and do it generously—you'll use more of it than you think, and it's the difference between a good sauce and a great one.
  • A squeeze of fresh lemon juice right at the table, added to individual plates, adds a brightness that makes the whole dish sing even louder.
