01 - Combine flour and salt in a large bowl. Create a well and add eggs, water, and olive oil. Stir to form dough, then knead on a floured surface for 5 to 7 minutes until smooth. Wrap dough in plastic and let rest for 20 minutes. Roll out dough to 1/8 inch thickness and slice into 1/4 inch wide strips. Set noodles aside on a floured surface to dry slightly while preparing the soup.
02 - Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5 minutes until softened. Add garlic and cook for 1 minute. Pour in chicken stock and add bay leaves, thyme, salt, and black pepper. Stir to combine.
03 - Add chicken pieces to the pot. Bring to a boil, then reduce heat to low and cover. Simmer for 35 minutes until chicken is cooked through. Remove chicken to a plate and discard bay leaves. Shred chicken into bite-sized pieces, discarding bones.
