01 - Pat shrimp completely dry with paper towels. Season evenly with salt and black pepper.
02 - Arrange three shallow bowls: place cornstarch in first bowl, beaten eggs in second, and panko breadcrumbs in third bowl.
03 - Dredge each shrimp in cornstarch to coat, dip into beaten egg, then press into panko breadcrumbs. Place breaded shrimp on a tray.
04 - Whisk together mayonnaise, sweet chili sauce, Sriracha, honey, and rice vinegar in a medium bowl until smooth and well combined.
05 - Pour vegetable oil to depth of 2 inches in a deep skillet or pot. Heat to 350°F.
06 - Fry breaded shrimp in batches for 2 to 3 minutes until golden brown and cooked through. Remove with slotted spoon and drain on paper towels.
07 - Transfer fried shrimp to bowl with Bang Bang sauce. Toss gently until shrimp are evenly coated.
08 - Arrange shrimp on serving platter. Sprinkle with sliced green onions and toasted sesame seeds.
