Apple Pie Rice Krispie Treats (Printable)

Crispy marshmallow squares studded with warm cinnamon apples and topped with white chocolate drizzle

# What You Need:

→ Base Layer

01 - 6 cups crispy rice cereal
02 - 1/4 cup unsalted butter
03 - 10 oz bag mini marshmallows
04 - 1/2 teaspoon vanilla extract

→ Apple Pie Filling

05 - 1 medium apple, peeled, cored, diced small
06 - 2 tablespoons unsalted butter
07 - 2 tablespoons light brown sugar
08 - 3/4 teaspoon ground cinnamon
09 - 1/8 teaspoon ground nutmeg
10 - Pinch of salt

→ Optional Topping

11 - 2 ounces white chocolate, melted for drizzling

# How-To Steps:

01 - Line a 9x9-inch baking dish with parchment paper and lightly grease the surface to prevent sticking.
02 - Melt 2 tablespoons butter in a small skillet over medium heat. Add diced apple, brown sugar, cinnamon, nutmeg, and salt. Cook, stirring frequently, until apples are tender and caramelized, approximately 4-5 minutes. Remove from heat and allow to cool slightly.
03 - In a large saucepan, melt 1/4 cup butter over low heat. Add mini marshmallows and stir continuously until completely melted and smooth. Remove from heat and incorporate vanilla extract.
04 - Quickly fold the cooked apple mixture into the marshmallow base, then add the rice cereal. Stir until all components are evenly distributed and coated.
05 - Transfer the mixture to the prepared baking dish. Press firmly and evenly across the pan, smoothing the top surface with a spatula.
06 - If desired, drizzle melted white chocolate over the top surface while still slightly warm for decorative finish.
07 - Allow the treats to cool at room temperature for at least 1 hour until completely set before cutting into 16 squares.

# Helpful Tips:

01 -
  • The warm apple pie filling transforms ordinary cereal bars into something special and nostalgic
  • They come together in under 30 minutes but taste like you spent all afternoon in the kitchen
02 -
  • Let the apple mixture cool slightly before mixing it into the marshmallows or it will melt them too much and make the treats soggy
  • Press the mixture firmly into the pan but not so hard that it loses all its airy texture
03 -
  • Grease your spatula before pressing the mixture into the pan to prevent sticking
  • If the white chocolate hardens too fast while drizzling, pop it back in the microwave for 10 seconds
